i'm pretty sure it's an easter egg. it can be done by creating a challenge on one of your circuits and selecting VS mode and 1 player

Select your arms
Select your legs
...and those would be taken from different parts of in-game character models.
Imagine hopping onto an online game and seeing this:

ANNOUNCEMENT! I am working on a big (sorta) project called SUPER REDYOSHI555 KART! It's a collection of all my tracks. I'm hoping for 4-6 cups, and unique course styles.
