Instead of getting a picture to make your character, You can make custom pixel art by tapping the pixels! 
Now that is Genius! That Concept reminds me of the App Sandbox. In the App you draw pixelated Drawings by tapping Little Squares!
My only issue with that would be it would take a long time to draw a Full 360 Sprite for Characters. This is the case with the App Sandbox when I tried drawing a 360 Model for Phineas for Super Phineas and Ferb Kart. But I think there is a way to solve that problem.

Another Idea:
Choose which Items will Appear on GP Mode only in QM and CM Multicups.
Choose which placing Items should appear for Multicups so in GP mode only in Multicups, You could get Tripple Mushrooms in 2nd.

Here is a Remake of My List:
1. Make the Courses in QM 8X8 or 10X10.
2. Choose a specific Starting point for each Player. That way you can Make 4 People start at a certain point and the other 4 People start at another Location. It would make Boones Bay 1 from SourMusic Kart Easier to make.
3. Add a Split Path Piece for QM. It will look like the Split Part in SNES Rainbow Road but would fit one Tile.

I wish in multicups I could bundle battle cups with the standard racing cups (like in the main game)

I had a cool Update Idea last night. I also decided to include some other ideas just so I wouldn't be making a topic just for one Idea that might be rejected.
Here My Ideas:
1. Changing Music Pitch. It would be cool to change the Music Pitch for Final Lap so I or anyone else wouldn't have to upload a video on youtube just to have the music at a certain pitch.
2. Making QM Tracks 8X8 or 10X10 instead of 6X6. 6X6 is too small to make anything fun.
3. Adding Split Paths. It would allow people to Make the Split path in SNES Rainbow Road in QM.
4. Add Koopa Beach 2 Land or Seaweed Parts in Koopa Beach QM.
5. Add Choco Island 2 Parts or the Chocolate Parts for QM.
6. Allow People to change the Engine Class in GP.
7. Make GP Fair for beginners or people who are still can't figure out RD. That would be me.
8. Add SNES Battle Course 2 QM Parts with Water. It isn't SNES Battle Course 2 if there isn't Water.
If any of these can be done Please let me Know.
