I completely agree. The GCN tracks are watered down in the DS. The DS remove the best parts about the tracks.

DK Mountain in 8DX
Sky Garden in 8DX/Tour (it's sky garden 2 not the sky garden i know)
As for downgrades i'd say :
GBA Bowser Castle 3 in Tour
GBA Bowser Castle 2 in DS
And that's about it

As for downgrades i'd say :
GBA Bowser Castle 3 in Tour
GBA Bowser Castle 2 in DS
And that's about it
That's not sky garden that's Air lawn

Booster Course Pass:
GBA Sunset Wilds, it was my favorite track from Super Circuit and got rid of everything that made it good
GCN DK Mountain, the music is destroyed, it feels so empty
Wii Koopa Cape, the laser beam things the pipe section are gone, the track is so small, and it looks really ugly now
Mario Kart DS:
Every GCN track pretty much
GBA Sunset Wilds, it was my favorite track from Super Circuit and got rid of everything that made it good
