I just got a stamp in MK8 for getting a new record (for once) on Moo Moo Meadows.

It is definitely the moo moo stamp because it was on moo moo meadows, pure guesswork
I kinda miss stamps and wish they were in 8 Deluxe, just to check out on the main menu, but on Wii U, you could post them to MiiVerse (useless now unless you have Pretendo), on Switch they could have been used as stamps for Time Trial records and Grand Prix completion.

Yeah. Those could also be posted on MiiVerse to add to courses you completed (and you could also play against others who put their gameplay online!)

MK8 is a pretty obscure game for Mario Kart, I don't remember them being there.
