Honestly this is one of those question where finding an answer is basically impossible, since they have all some sort of incomparable differences in gameplay, design, music or even overall themes WHILE still being similar over the years, and obviously thet were sometimes not helped with technical limitations, actually it's like the "Who's the GOAT in Formula 1" question when with every differences between cars, rules, circuits and drivers themselves (while still being the same idea since 1950) this is just impossible to answer
Anyways if I can answer with my FAVORITE (which I don't consider the best but nostalgia is more powerful than anything) then i'll go with MKDS, first ever true game I had

the bots in grand prix are way to hard. and for the love of God don't tell me "oh just learn how to reverse drift" and send me the exact same JPG video with the kb inputs and say its "EASY" its not it just isn't I just want to have all characters unlocked
Actually you don't even have to rd, I got every cups months before even starting to understand rd, rd just make it more easier (I literally can be a lap ahead not even joking and i'm not even that good)

je sais pas si c'est nouveau mais les ordis font toujours une tete a queue au début de la course et du coup c'est ttrop facile de les dépasser des le début
c'est parce que tu joues en mode facile (ou peut-être moyen jsp) en difficile et + ils font pas ça donc bon
