I would say it's so the colors line up, BUT IT DOESN'T EVEN HELP WITH THAT! If anything, it just makes it worse.

So it's a stupid question, but why in DS Rainbow Road quick mode the turns are not complete ? There are holes ! See this screenshot from Star Drifts
(a bitty pub :P), we see holes on the track. Why ? This is a problem. This is not like the original. Plus like everyone knwo already ... Can we fix DS Rainbow Road ? Even the pros can have problems on this track.
