I think you forgot that the thing that separates rainbow Roads from other tracks is the very hard difficulty. It's supposed to be hard, just like MKPC Grand Prix Mode, which also really triggers me.

GBA Rainbow Road having no jumps on the edges of the track despite having the same texture as a normal jump. It always throws me off the first time I play it in a while. I mean, it is aspect of the track that makes it unique compared to other rainbow road tracks and it would be so simple and easy to just add jumps to it.

I ranked all 9 Rainbow Road tracks below (It may be a bit controversial)
9th: Wii U Rainbow Road (I freaking hate this piece of ....)
8th: GBA Rainbow Road (Very mediocre; the only thing going for it is the jumps on the sides of the road)
7th: SNES Rainbow Road (Iconic, but very difficult and uses the same layout as eight of the other tracks from the same game.)
6th: DS Rainbow Road (Forgettable track, and not nearly as cool due to the Wii U's antigravity mechanics )
5th: N64 Rainbow Road (Good but repetitive track that needs much more love)
4th: GCN Rainbow Road (A chaotic classic that just screams Mario Kart)
2nd:Wii Rainbow Road (My most nostalgic Rainbow Road, but still not the best)
3rd: Switch 2 Rainbow Road (The track seems amazing, but I haven't unlocked it yet)
1st: 3DS Rainbow Road (The best track in all of Mario Kart. Words can't describe how incredible it is. If you dislike this track, then you just dislike Mario Kart)

I dislike Super Mario Kart's repetitive track design. All the courses (with the exceptions of MC1, GV1, MC2, GV2, and GV3) either have a plain oval layout or the "MC3" layout, being a square with an inward hairpin in the middle. Also, the Nintendo members must have been drunk when they made CI2 and KB2, because they both have a very tedious off-road section in the middle, especially KB2, which has holes in the center of the unavoidable off-road section that you can very easily fall into, due to the water physics.
I also think that N64 Wario Stadium and N64 Rainbow Road are much better than their more modernized counterparts from Mario Kart 8 and Mario Kart World. I might be the only one who thinks this, but you can't change my opinion. In N64 Rainbow Road from the Wii U, the track is obviously sections instead of laps, and even the time it takes to complete the track is less than the time it would take you to complete a single lap in the original. Similarly, in N64 Wario Stadium from the Switch 2, the track is missing a huge chunk of track in many places, being from the first hairpin to the jump (It also doesn't have the 200 Wario faces just placed all over the side of the track) The way to make these tracks better, however, is making them 2 laps, like GCN Wario Colosseum, one of my personal favorite tracks.
