Mine are Mario Kart Wii, New Super Mario Bros. Wii, WarioWare Inc. (on emulator), Mario Odyssey, Kirby's Dream Land (Kirby's 20th anniversary collection version), New Super Mario Bros. U (Deluxe), Mario Maker 2 story mode (twice), Game Builder Garage (all the tutorial lessons), and this game, MKPC.

You could add staff ghosts! Every track could have a ghost created by someone on the MKPC team and a faster ghost unlocked after beating it. You could also let people optionally set their own custom staff ghosts on their custom tracks. There could even be unlockables for beating staff ghosts in the main game or on custom tracks!

Great multicup! Two things though - the characters are a bit repetitive. Why not add characters like Waddle Dee or Meta Knight? Also, one of the challenges (specifically kirby dream racing arena) is near impossible in difficulty. The tracks are nice though!
