I remember having a dream about a remake of 3DS Rainbow Road with parts that go underwater like MK8 Boo Lake, and funnels which are actually holes with water flowing in the direction that you are going on all sides of the circle.

Probably stuff that either makes no sense as a race track or just leans way too hard into a gimmick.
Toilet Track – you're literally racing around a bathroom with a giant toilet and toothbrushes. Not much else to say.
Cheese Land – the entire planet is made of cheese and there are giant mice running around. Even for Mario this is a bit much.
Tick-Tock Clock – racing inside a giant clock with moving gears and pendulums. Cool mechanically but still pretty weird as a location.
Baby Park – not visually weird, but the concept of a 7-lap oval with chaos items everywhere is basically a joke track.
If you include custom tracks (especially in Mario Kart PC), the list gets way longer. People have made tracks inside computers, memes, abstract shapes, etc. At that point it's less “weird Mario Kart track” and more “anything that vaguely functions as a road.”

yo this is actually a solid point lol
like bathroom tracks? gotta love that random splash zone vibe but it gets weird when your kart’s supposed to be racing but also kinda swimming in soap or water puddles
and food tracks? big mood. it’s like racing inside a giant sandwich or chocolate bar — fun concept but yeah, physics don’t really make sense when you imagine a tiny kart driving over giant cheese chunks or cake layers
weight differences? legit! how does a kart zip over a massive chunk of cheese without getting slowed down or stuck? gotta suspend disbelief hardcore
at the end of the day, weird tracks are fun for novelty but sometimes they stretch the “race” part too far and just become silly obstacle courses
still, can’t deny they add flavor (pun intended) to the game lol
