I decided to reboot my failed attempt from several months ago. It was decent looking back and rereading it, but the cast was tiny, the challenges were boring, I didn't do a good job at writing the characters, I let two Koopalings take up a quarter of the cast, and I got tired of the season pretty quickly. I'm gonna do whatever I can to make this version more interesting. I haven't decided on tribes or a location, and I don't even have a cast. I will try to push this out though once I do. In the meantime, feel free to share your thoughts on who you would like to see compete.

Bullet Bill. You go really fast, you're invincible, and if you're on a custom course with few checkpoints, you could skip huge portions while still getting a lap count.
Even on official tracks, it's a very strong safety net. If you skip a checkpoint the bullet bill takes you back to ensure you complete the lap.

Ghost Valley, Bowser Castle, and Vanilla Lake sound better in Super Circuit than Super Mario Kart.

I know I already posted, but that Baby Luigi opinion is gone from my head. Instead, I have this list.
The arcade games are pretty decent.
Ice Ice Outpost isn't that bad either.
There's no reason for guest characters to be in Mario Kart.
It's not that the Koopalings show up too much. They're just used horribly. (I can make a topic on that if you want)
Nabbit was a lazy character option for NSLU.
Mario Kart Wii's motion controls aren't bad once you get used to them.

I might sound like a noob when I say this, but Baby Luigi might be one of the best characters. Sure, he's a small, but he has the biggest speed boost and the biggest weight boosts.

If you mean with CPU's, then you're in luck. If you pick the characters, then it will take turns between your team and the other team.
