Being able to lock cups behind challenges, like the Special Cup. And locking challenges behind other challenges.

If you want to cover a large distance, use a cannon. If you want a short enough distance but also multiple places to land, use a jump.
Underwater can be simulated pretty well in regards to falling into water but the physics can't.
The best you'll get with anti-gravity is an override to flip the background 90/180 degrees and call it a day.
These things won't work if the game is flat. Heck, anti-grav doesn't even exist anymore (nevermind that World's mechanics are more unusable here than the ones in 7 & 8 because they actually do something to the gameplay now)
@FamtomeThief, motion glider and jezua glider can't be done with cannons or jumps, and for God sake YOU CAN'T EVEN USE ITEMS, NOR CONTROL YOURSELF IN CANNONS. gliders are a good feature, but I get why you wouldn't want them, it's my opinion, and you can disagree
Motion and jenzua literally need motion controls to work. This game does not have them. It never will. Thid game does not have gliding. Gliding is a good mechanic. But this game can't use it. There's no roon for it in quick mode, no room for it in the base game, and no room for it in most custom tracks. The game has no verticality. That's not an opinion.

The closest we'll get to having depth/verticality is with the override feature. Gliding is never going to work differently than other features.

You mean like a cannon would? Like jumps? Like teleporters?
There's nothing gliding can do in 2D that these options can't. And it would look really wrong unless you're gliding over gaps exclusively.
no, there's a lot that could be done:
1. Glide barriers: walls, but in glider form
2. Glide ends: force player to end glider
3. allow players to glide through those fire rings (I forget what there called)
4. allowing players to glide over decor, walls, and holes.
they could work if Glide ends and Glide barriers are added as well, glide ends wouldn't even allow you to do crazy skips, heck hitting someone midair in a glider would be so satisfying (but annoying for the other player). the possibilities are endless! it would even add more depth to tracks. it wouldn't replace cannons either, they're still very useful.
Jumps already do that dude! If we ended up getting gliders it'd be just like Mario Kart 8 where you just glide in a straight line 90% of the time which jumps already do. Jumps can have multiple routes exiting them like some glider ramps do too.

Voice lines? That's way too much effort, and would get annoying really fast. It also doesn't fit with the SNES style.

Looks like they need an update for 3D modeling. I just want this to be 3D and runnable on a chromebook.
Good luck with that. The game is based on Super Mario Kart, so it'll never be 3D. You'll have to make a 3D one yourself.

UPDATE: Project Canceled. MKPC Generations is far and away better than anything I can do with this idea. (Also 3DS is a complete pain to do) Go give it a play (if you already haven't for some reason) here

With the two of my current CM multicups now past 50% completion, I'm starting up my third one, which might attract more attention than the others.
Mario Kart PC is really fun, but a lot of the base game courses are really tight & sometimes un-enjoyable, especially on 200cc, which is less played, but still there. So, my plan is:
To do re-imaginings* of every track in the base game to make them more playable in 200!(And also diversify how the ones with multiple versions look like CTGP & Retro Rewind do)
* - Citation needed: "Reimagining" is stretching it.
This will also include making courses look more inline with their renditions from MK7, MK8 & Tour(using the logic presented in the Booster Course Pass, where Waluigi Stadium & Peach Gardens, tracks seen in Wii, have had some changes, showing that anything from that or earlier is fair game.)
It will also include(after approaching their creators directly for permission) more characters(Mario series only)
And the most requested feature ever in this game:
The 3DS tracks!*
* - Will I ever get here? I might cancel it before then...
And lastly, I'm grabbing newer versions of songs/remixes off of Youtube for the music to fit the tracks looking less dated.

Rainbow Road usually goes for either difficulty or spectacle. Too much of one and too little of the other is not great
(Like World) Double Dash does both which is why I personally think it's the best.
3DS isn't a terrible track but it leans way too much into the spectacle for their massive Space Adventure.
